Detailed description

Food testing items GB 5009.88-2014 National Food Safety Standard - Determination of dietary fiber in

Detection standard

  • Detection specification

1、 Scope

This standard specifies the method for determining dietary fiber in food (enzymatic gravimetric method) This standard is applicable to the determination of total, soluble, and insoluble dietary fiber in all plant-based foods and their products, but does not include dietary fiber components such as oligofructose, galactooligosaccharides, polydextrose, resistant maltodextrin, and resistant starch

Secondly, terms and definitions

2.1 Dietary fiber (DF)

Carbohydrate polymers that cannot be digested and absorbed by the human small intestine but have health significance, naturally present in plants or extracted/synthesized, with a degree of polymerization DP ≥ 3. Including cellulose, hemicellulose, pectin, and other monomer components 2.2 Soluble Dietary Fiber (SDF)

The portion of dietary fiber that is soluble in water, including oligosaccharides and some indigestible polysaccharides 2.3 Insoluble Dietary Fiber (DF)

The portion of dietary fiber that is insoluble in water, including lignin, cellulose, and some hemicellulose

2.4 Total Dietary Fiber (TDF)

The sum of soluble and insoluble dietary fibers.

Thirdly, Principles

The dried sample is thermally stable α- After enzymatic digestion with amylase, protease, and glucosidase to remove protein and starch, the residue is precipitated with ethanol, filtered, washed with ethanol and acetone, dried and weighed to obtain the total dietary fiber residue. Take another sample for enzymatic hydrolysis, directly filter and wash with hot water, dry and weigh the residue to obtain insoluble dietary fiber residue; The filtrate was precipitated with 4 times the volume of ethanol, filtered, and dried to obtain soluble dietary fiber residue. By deducting the corresponding protein, ash, and reagent blank content in various dietary fiber residues, the total, insoluble, and soluble dietary fiber content in the sample can be calculated
